This program is the ultimate destination for those who want to master the science behind the food we eat, from initial formulation to the moment it reaches the consumer's plate. You will combine chemistry, microbiology, and engineering to develop the next generation of safe, sustainable, and innovative food products for a global market.


Curriculum Structure

Year 1

Your first year is dedicated to building a rock-solid foundation in the core scientific disciplines that every food scientist needs. You will dive into fundamental modules like Cell Biology & Genetics and Introductory Chemistry, while getting your first taste of the industry through the Food Diet & Health introductory course.

Year 2

In the second year, the focus shifts to the applied sciences where you begin to see how theory translates into food production. You will explore critical technical subjects such as Food Analysis, Food Macronutrients, and Agricultural Microbiology, ensuring you understand the molecular and microbial makeup of the products you'll be creating.

Year 3

The third year is defined by high-impact, real-world experience, featuring a mandatory 5-month Professional Work Experience (PWE) placement within the food industry. Alongside this, you will sharpen your innovative edge with modules in New Product Development and Food Chemistry, preparing you to enter the workforce as a capable professional.

Year 4

Your final year focuses on advanced technology and mastery of specific food sectors to prepare you for leadership roles. You will tackle specialized modules in Dairy Technology, Meat Science, and Food Safety, while completing an independent Food Science Research Project that allows you to contribute original findings to the field.

  • Professional Work Experience (PWE): You will undertake a mandatory 16-to-20 week internship in Year 3. This is a deep-dive into the industry where you work alongside professionals in companies like Kerry Group, Glanbia, or Diageo, applying your skills in real-world production, quality control, or research settings.

  • UCD Institute of Food & Health: You will benefit from the expertise and resources of this major research hub, which houses the UCD Centre for Food Safety. This environment puts you at the heart of cutting-edge research in foodborne pathogens and molecular innovation.

  • Specialized Food Analysis Laboratories: You will gain hands-on proficiency in our dedicated labs, using advanced equipment for High-Performance Liquid Chromatography (HPLC), gas chromatography, and microbial culturing to analyze food macronutrients and contaminants.

  • Sensory Evaluation Suite: You will participate in objective sensory profiling and consumer taste-testing in our professional sensory labs, learning the precise methodologies used to refine flavors and textures for new market launches.

  • New Product Development (NPD) Teams: In your final year, you will join a group project to formulate a food product from scratch. This includes everything from the initial chemical formulation and stability testing to designing packaging and conducting safety audits.

  • Industry-Standard Software: You will master digital tools essential for modern food science, including applied biostatistics software for data interpretation and specialized platforms like Brightspace for virtual lab simulations and quizzes.

  • UCD Lyons Farm: This 250-hectare research farm serves as your primary resource for understanding raw material quality. You’ll see firsthand how on-farm practices influence the chemical and nutritional profile of the ingredients you’ll later process in the lab.

  • Field Trips & Industrial Site Visits: Your learning includes guided visits to high-volume food processing plants and dairy technology hubs, giving you a "behind-the-scenes" look at automated production lines and industrial-scale engineering.
