This program offers a deep dive into the scientific relationship between diet and health, covering everything from the molecular mechanics of nutrients to public health strategies. It is perfectly suited for students with a strong interest in biological sciences who want to solve global health challenges through food innovation, research, or clinical applications.
Curriculum structure
Year 1
Your first year is all about building a rock-solid scientific foundation in the core biological and chemical principles that govern human health. You’ll explore the fundamentals of how we process food in Human Nutrition I, while gaining essential laboratory and theoretical knowledge in Cell Biology & Genetics and the Chemistry of Biomolecules.
Year 2
In the second year, you’ll shift your focus toward the specialized study of nutrients and their specific metabolic pathways within the body. You will delve into the details of Food Macronutrients, study the clinical aspects of the Molecular Basis of Disease, and learn how to track health trends in Population Nutrition Research.
Year 3
The third year is a standout feature of the UCD experience, dedicated entirely to a 10-month Professional Work Experience (PWE) placement. This year-long module allows you to apply your academic knowledge in real-world settings such as the food industry, research institutes, or public health agencies, often leading to immediate job offers upon graduation.
Year 4
In your final year, you’ll refine your expertise through high-level research and specialized modules that look at the cutting edge of the field. You will complete a major Nutrition Research Project and master complex topics like Molecular Nutrition, Clinical Nutrition, and the intricacies of Food Regulation.
Focus areas: Metabolic Biochemistry, Molecular Nutrition, Public Health Nutrition, Clinical Nutrition, Food Regulatory Affairs, and Nutrition Communication.
Learning outcomes: Graduates will be able to scientifically evaluate the link between diet and disease, design evidence-based nutritional interventions, conduct advanced laboratory research, and effectively communicate complex health data to both the public and industry stakeholders.
Professional alignment (accreditation): The program is designed to meet the standards of the Association for Nutrition (AfN), meaning you will be eligible to apply for direct entry to the UK Voluntary Register of Nutritionists (UKVRN) as a Registered Associate Nutritionist (ANutr).
Reputation (employability rankings): UCD is consistently ranked #1 in Ireland for Graduate Employability (QS World University Rankings). Furthermore, UCD’s School of Agriculture and Food Science is ranked 24th globally for Agricultural Sciences (U.S. News & World Report), placing you in a world-class environment for nutrition science.
One of the most exciting parts of the BSc in Human Nutrition at UCD is that you don’t just learn about science in a textbook—you live it. From your very first semester, you are immersed in a hands-on environment where you’ll use the same tools and techniques as professional nutritionists and researchers. Whether you're analyzing the molecular structure of a vitamin in a high-tech lab or collaborating on a population health study, the program is designed to build your confidence through direct, practical application.
This focus on "learning by doing" ensures that by the time you reach your final year, you aren't just a student, but a skilled practitioner ready for the workforce. You will bridge the gap between theory and practice through:
10-Month Professional Work Experience (PWE): A cornerstone of the degree, this mandatory year-long placement in Year 3 sees you working in the food industry, clinical research settings, or government agencies like the Food Safety Authority of Ireland (FSAI).
The UCD Institute of Food and Health: You will have access to this world-class research hub, where undergraduate students often participate in cutting-edge human health studies and clinical trials.
Advanced Laboratory Facilities: You’ll spend significant time in dedicated bioscience and chemistry labs, using specialized equipment for sensory analysis, food chemistry, and metabolic testing.
Specialized Software Tools: You will gain proficiency in industry-standard software for dietary analysis (such as Nutritics) and statistical tools like Stata or R for analyzing large-scale nutrition research data.
Interactive PC Labs: Many core modules, including Nutrition Research Methodology, utilize UCD’s dedicated PC labs for supervised data modeling and bioinformatics sessions.
Group Research Projects: In your final year, you’ll join a research team to complete an original Nutrition Research Project, involving study design, ethical approval, and data collection.
Digital Learning Environment: All course materials, peer-review tasks, and collaborative group work are managed through Brightspace and Google Workspace, preparing you for the digital workflows of the modern healthcare and food sectors.
UCD O’Brien Centre for Science: Most of your practical learning happens in this state-of-the-art facility, which features the latest in STEM educational technology and collaborative "active learning" classrooms.
Graduating with a BSc in Human Nutrition from UCD opens doors to an expansive range of careers where science meets society, allowing you to influence global health at every level from lab research to public policy. Most of our graduates find themselves leading innovation in the global food industry, spearheading public health campaigns, or advancing clinical research to treat chronic diseases. You will be prepared for high-impact roles such as:
Nutritionist in the Food Industry: Developing healthy new products for global brands like Kerry Group or Glanbia.
Public Health Nutritionist: Designing community health programs for government bodies like the HSE or international NGOs.
Nutrition Researcher: Conducting clinical trials at world-class institutes to uncover the next breakthrough in metabolic health.
Regulatory Affairs Specialist: Ensuring food products meet strict legal and safety standards for consumer protection.
Progression & Future Opportunities:
UCD Careers Network: You will have access to a dedicated Science Career Consultant and the "Jumpstart" program, which provides one-to-one coaching, CV workshops, and mock interviews specifically tailored for nutrition science roles.
Employment Stats and Salary: UCD graduates are highly sought after, with Ireland's average nutritionist salary being approximately €40,000 to €58,000 depending on the sector, while senior roles in regulation or industry management can exceed €80,000.
University–Industry Partnerships: Our 10-month Professional Work Experience (PWE) is supported by deep ties with industry leaders such as Danone, Abbott, and the Food Safety Authority of Ireland (FSAI), often serving as a direct pipeline to full-time employment.
Long-term Accreditation Value: Because this program is accredited by the Association for Nutrition (AfN), you graduate with a globally recognized "gold standard" credential, allowing you to join the UK Voluntary Register of Nutritionists (UKVRN) immediately.
Graduation Outcomes: UCD is consistently ranked #1 in Ireland for Graduate Employability, ensuring your degree carries significant weight with employers worldwide.
Further Academic Progression:
After completing your BSc, you are perfectly positioned to pursue advanced specialization. Many of our graduates choose to apply for the MSc in Clinical Nutrition & Dietetics at UCD to become a Registered Dietitian, or enter the MSc/PhD research track within the UCD Institute of Food and Health.
