The story of Amity College began with the establishment of its founding body, Galaxy Foundation (formerly Feza Foundation) in 1994. This foundation was created by a group of proactive individuals from Turkish backgrounds who aimed to contribute to the community, especially in the realm of education. With strong community support, Galaxy Foundation quickly acquired land in 1995 and set up its inaugural school, previously known as Sule (meaning light in Turkish) College in Prestons. By February 1996, Sule College welcomed its first students, consisting of 32 children from Kindergarten to Year 3. The following year, the College's enrollment grew to 282 students from Kindergarten to Year 7. The institution continued to expand rapidly, leading to the establishment of a one-stream Primary School in the Illawarra region in 1999. In response to community demand, another primary school was opened in Auburn district in 2001. Over time, the exceptional quality of education at Amity College attracted a diverse range of students and teachers from various backgrounds. As a result, the school evolved into a multicultural family with over 2000 students representing more than 40 nationalities. This diversity in the school's student and teacher population prompted the School Board to reconsider its name and opt for one that better reflected the inclusive nature of the community. Following extensive consultations with stakeholders and the community, the school was renamed Amity College. The term "Amity" signifies friendship, peaceful harmony, and mutual understanding, encapsulating the school's core values.
