Mary T. Wales and Gertrude I. Johnson established Johnson & Wales University in 1914 as a business school. On Hope Street in Providence, the school was founded with just one student and one typewriter. Men and women were allowed to enroll in the school. In 1963, the school was officially recognized as a nonprofit institution.

The colleges of business, hospitality, arts & sciences, and engineering & design are located on the Johnson & Wales University campus in Providence. The College of Culinary Arts and the Alan Shawn Feinstein Graduate School are two other academic institutions that are located on this campus. Furthermore, it contains a School of Education that provides specialized master's and doctoral degree programs. A Master of Arts in Teaching (M.A.T. Program) is available for students just starting out in the field, while a Master of Education is available for practicing teachers (M.Ed.).    Four places are where Johnson & Wales University has campuses:

  • Downcity, the original Providence, Rhode Island campus that houses   JWU's business, hospitality, and technology programs, opened its doors in 1914. Cranston, Rhode Island's Harborside, a satellite campus that houses JWU's culinary and graduate programs, opened its doors in 1985.
  • North Dolphin, Florida (opened in 1992 – closed in 2021)

The university also runs hotels utilized as practicum education facilities for its degree programs in hotel & lodging management, food service management, and culinary arts. These hotels are in addition to the on-campus academic buildings and residences. At the Charlotte Campus, the Doubletree Hotel Charlotte-Gateway Village is also owned by the university.

Johnson & Wales University's fitness center offers sports and fitness activities (JWU). Students must have their accounts free of holds and be registered for the current semester. Any faculty or staff members who wish to use the facilities must obtain membership through the Faculty Student Association at Gregory Hall. Aside from the 6,500 pounds of free weights, there are 18 treadmills, 10 cross trainers, 25 ellipticals, 5 motion trainers, 4 recumbent bikes, 4 upright bikes, 1 upper body ergometer, 25 selectorized weight machines, 3 heavy-duty power racks with platforms, 10 medicine balls, 10 exercise balls, 30 resistance bands, and 20 workout mats.
