Lara Costantini received her PhD in food biotechnology in 2015 after doing research on the effects of using chia seeds in functional food formulations on biochemical indicators of cardiometabolic disorders. She had seven postdoctoral posts, including research grants and fellowships, between 2015 and 2021. She has been a biochemistry research fellow (RTDa) since December 2021 (SSD BIO/10). Her areas of expertise include the development and research of functional foods, dietetics, and the relationship between microbiome and nutrition.
